Delicious vegan chocolate pudding.

Ingredients
  • 1 16 oz package silken tofu
  • 3 tbsp confectioners sugar
  • 8 oz semisweet chocolate
  • 6 tbsp water
  • 3 tbsp unsweetened cocoa powder
  • 1 tsp pure vanilla extract
Instructions
  1. In a food processor blend tofu and confectioners sugar until well blended.
  2. In a small double boiler warm chocolate, water, cocoa and vanilla on low. Stir thoroughly until melted and mixed.
  3. Pour chocolate sauce into food processor with sweetened whipped tofu and whirl again until very smooth.
  4. Spoon into 6 serving cups and chill for at least an hour.
  5. Garnish with chopped toasted walnuts and raspberries.
