Ingredients
Maple Wheat Croutons:
6 slices whole wheat bread cut into ½ inch cubes
¼ cup olive oil
1 tbsp maple syrup
½ tsp salt
⅛ tsp pepper
Caeser Dressing:
¼ cup Silken tofu
¼ cup olive oil
2 cloves garlic
2 tbsp lemon juice
1 tbsp apple cider vinegar
1 tbsp Dijon mustard
1 tbsp white miso paste
1 tsp salt
¼ tsp freshly ground black pepper
The rest:
1 head of romaine lettuce cut or torn into bite sized pieces
Instructions
First prepare your croutons. Preheat the oven to 325 F degrees.
Cut 6 pieces of bread into ½ inch cubes.
Mix the olive oil, maple syrup, salt and pepper in a large bowl and then add your bread cubes and toss well until evenly coated.
Bake for about 25 minutes flipping every 10 minutes and watch to ensure they don't burn. When they are crisp and golden brown, they are done.
Remove from the oven and set aside to cool.
For the dressing add your Silken tofu, olive oil, garlic, lemon juice, apple cider vinegar, Dijon, white miso, salt and pepper to a food processor and blend until smooth.
In a large bowl combine lettuce with as much dressing as you like and top with a handful of Maple Croutons.
