Quinoa Soup With Squash and Pesto

Serves: 4
- 2 tbsp olive oil (or a bit of water to saute in)
- ½ small onion finely chopped
- 1 stalk celery, finely chopped
- 3.5 cups vegetable stock
- 1 lb butternut squash, peeled and cut into ½ inch cubes
- ⅔ cups quinoa
- 1 14 oz. can diced tomatoes
- 2 tablespoons pesto
- salt and pepper to taste
- Place oil (or water) in pot over medium heat.
- Cook onions and celery about 3 minutes.
- Add stock, squash, quinoa and tomatoes and bring to a slow simmer.
- Simmer 15-18 minutes or until squash and quinoa are tender.
- Stir in pesto.
- Season with salt and pepper.
- Serve.
