Quinoa Soup With Squash and Pesto

A delicious, hearty soup perfect in the fall and winter.

Serves: 4
Ingredients
  • 2 tbsp olive oil (or a bit of water to saute in)
  • ½ small onion finely chopped
  • 1 stalk celery, finely chopped
  • 3.5 cups vegetable stock
  • 1 lb butternut squash, peeled and cut into ½ inch cubes
  • ⅔ cups quinoa
  • 1 14 oz. can diced tomatoes
  • 2 tablespoons pesto
  • salt and pepper to taste
Instructions
  1. Place oil (or water) in pot over medium heat.
  2. Cook onions and celery about 3 minutes.
  3. Add stock, squash, quinoa and tomatoes and bring to a slow simmer.
  4. Simmer 15-18 minutes or until squash and quinoa are tender.
  5. Stir in pesto.
  6. Season with salt and pepper.
  7. Serve.
