KIDS Extra Creamy Mac and Cheese

Serves: 6 child size servings.
- 1.5 cups potato, peeled and cut into bite size pieces
- 1 cup carrot, cut into ½ inch rounds
- ½ cup yellow onion, diced
- 2 cups water
- ½ cup Vegan Becel margarine
- ½ cup nutritional yeast
- 2 tbsp ketchup
- ½ tsp turmeric
- 1¼ tsp salt
- ¾-1 tsp garlic powder
- ¾-1 tsp onion powder
- 3 tbsp coconut milk (from a can)
- 3 turns black pepper
- 1 tsp white/ shirt miso
- 1 tsp mustard (prepared)
- 1 tbsp lemon juice
- 4 cups dried white macaroni or gluten free rice macaroni
- additional ketchup for serving
- Place potato, carrot and onion in a pot with 2 cups of water and bring to a boil.
- Cover, reduce heat and simmer for 20 minutes.
- Turn off heat and add vegan Becel, nutritional yeast, ketchup, turmeric, salt, garlic powder, onion powder and pepper, miso, mustard and lemon juice
- Transfer to Vitamix and blend until smooth.
- Add 3 tbsp of canned coconut milk and blend again.
- Cook macaroni as per package directions. Drain and return to pot.
- Pour sauce over top and mix well.
- Serve with ketchup.
