KIDS Extra Creamy Mac and Cheese

A healthy version of the mac and cheese from your youth.

Serves: 6 child size servings.
Ingredients
  • 1.5 cups potato, peeled and cut into bite size pieces
  • 1 cup carrot, cut into ½ inch rounds
  • ½ cup yellow onion, diced
  • 2 cups water
  • ½ cup Vegan Becel margarine
  • ½ cup nutritional yeast
  • 2 tbsp ketchup
  • ½ tsp turmeric
  • 1¼ tsp salt
  • ¾-1 tsp garlic powder
  • ¾-1 tsp onion powder
  • 3 tbsp coconut milk (from a can)
  • 3 turns black pepper
  • 1 tsp white/ shirt miso
  • 1 tsp mustard (prepared)
  • 1 tbsp lemon juice
  • 4 cups dried white macaroni or gluten free rice macaroni
  • additional ketchup for serving
Instructions
  1. Place potato, carrot and onion in a pot with 2 cups of water and bring to a boil.
  2. Cover, reduce heat and simmer for 20 minutes.
  3. Turn off heat and add vegan Becel, nutritional yeast, ketchup, turmeric, salt, garlic powder, onion powder and pepper, miso, mustard and lemon juice
  4. Transfer to Vitamix and blend until smooth.
  5. Add 3 tbsp of canned coconut milk and blend again.
  6. Cook macaroni as per package directions. Drain and return to pot.
  7. Pour sauce over top and mix well.
  8. Serve with ketchup.
