Sweet and Spicy Not-So-Fried Rice

A loaded, delicious, spicy, 'tastes like fried rice' recipe.

Ingredients
  • 1 tbsp canola oil
  • 1 onion diced
  • ½ tsp salt
  • 3 cloves garlic minced
  • 2 tsp curry powder
  • 1 tsp ground coriander
  • 1½ lb (210 gram) block of smoked tofu cut into small cubes
  • 1½ cups pineapple diced
  • ¾ cup cashews
  • 1 carrot peeled and shredded
  • ½ cup frozen peas
  • ½ cup raisins
  • 3 cups cooked rice
  • ¼ cup vegetable broth
  • 3 tbsp soy sauce (to taste)
  • Serve with:
  • thai sweet chilli sauce to taste (optional)
Instructions
  1. Prepare your ingredients.
  2. In a large skillet, heat oil over medium high and saute the onions until soft.
  3. Season with ½ tsp of salt.
  4. Add garlic, curry and coriander and cook for another minute.
  5. Add cashews, carrots, peas, raisins, pineapple, smoked tofu, rice, soy sauce and broth.
  6. Mix throughly and serve with Thai Sweet Chili Sauce (optional)
