Sweet and Spicy Not-So-Fried Rice

- 1 tbsp canola oil
- 1 onion diced
- ½ tsp salt
- 3 cloves garlic minced
- 2 tsp curry powder
- 1 tsp ground coriander
- 1½ lb (210 gram) block of smoked tofu cut into small cubes
- 1½ cups pineapple diced
- ¾ cup cashews
- 1 carrot peeled and shredded
- ½ cup frozen peas
- ½ cup raisins
- 3 cups cooked rice
- ¼ cup vegetable broth
- 3 tbsp soy sauce (to taste)
- Serve with:
- thai sweet chilli sauce to taste (optional)
- Prepare your ingredients.
- In a large skillet, heat oil over medium high and saute the onions until soft.
- Season with ½ tsp of salt.
- Add garlic, curry and coriander and cook for another minute.
- Add cashews, carrots, peas, raisins, pineapple, smoked tofu, rice, soy sauce and broth.
- Mix throughly and serve with Thai Sweet Chili Sauce (optional)
