Maple Cinnamon Glazed Bananas Drizzled in Chocolate

A delicious decadent dessert made with bananas, chocolate sauce and coconut ice cream.

Serves: 1-4
Ingredients
  • 4 firm bananas
  • 1 tsp coconut oil
  • ¼ cup maple syrup
  • ½ tsp cinnamon
  • ¼ cup non dairy chocolate chips melted with approx 1 tsp of WARM water added to thin
  • Vanilla Coconut Bliss ice cream (or other non dairy ice cream of choice)
Instructions
  1. Peel your bananas and slice them lengthwise.
  2. Heat your coconut oil in a pan over medium heat and add the bananas.
  3. Cook them for about 3 minutes and flip them over.
  4. Cook for about another 3 minutes until the bananas have softened.
  5. Melt your 'Enjoy Life' or other non dairy chocolate chips in the microwave for about 30 seconds. I add about a tsp of WARM water to thin. (Don't add cold or you will end up with a lumpy mess).
  6. Remove the pan from the heat and add your maple syrup, tossing very gently to combine.
  7. Sprinkle with cinnamon.
  8. Serve onto individual plates and top with Coconut Bliss (or your favourite non dairy ice cream) vanilla ice cream and drizzle the whole thing with melted chocolate.
