Apple Streusel

- 5 cups peeled apples sliced thin
- ½ cup sugar
- 2 tbsp flour
- ¾ tsp cinnamon
- ⅛ tsp nutmeg
- ⅛ tsp allspice
- 1 unbaked pie crust
- TOPPING:
- ½ cup flour
- ½ cup brown sugar
- ½ cup quick oats
- ¼ tsp cinnamon
- ¼ cup Earth Balance baking sticks (or other vegan 'butter') at room temperature
- Preheat oven to 425 (220 C).
- In a large mixing bowl, mix the sugar, flour, cinnamon, nutmeg and allspice.
- Add the sliced apple and toss well to coat.
- Spoon this mix into the pie shell.
- Topping:
- In a separate bowl mix together the flour, brown sugar, cinnamon and oats.
- Add the 'butter' and use a pastry blender until coarse/crumbly.
- Sprinkle this evenly over the apple filling.
- Bake on the lower third of the oven at 425 F (220 C) for 15 minutes.
- Reduce to 350 and bake for about 35 minutes more until apples are soft and topping is golden brown.
- Test apples to make sure they are soft with the tip of a pointed sharp knife.
- Cover loosely with foil if the top is browning too quickly.
- Remove from oven and let it cool slightly.
- Serve with or without ice cream.
