The Best Darned Gravy I've Ever Had

The best gravy ever.

Ingredients
  • ½ cup nutritional yeast
  • ¼ cup all purpose flour (or use Gluten Free such as Bob's Red Mill)
  • ⅓ cup olive oil
  • ½ cup finely chopped onion
  • 2 tsp minced garlic
  • 2 tsp chopped fresh thyme or 1 tsp dried
  • 2 tsp chopped fresh sage or 1 tsp dried
  • 1 tbsp ground flaxseed
  • 4 cups water
  • ¼ cup tamari
  • ½- 3/4 tsp freshly ground black pepper
Instructions
  1. Stir nutritional yeast and flour in a dry heavy skillet over medium heat for about 5 minutes until golden and fragrant. Set aside.
  2. Heat oil in a large heavy saucepan over medium heat.
  3. Add onion and saute until beginning to brown about 7 minutes.
  4. Add garlic, thyme, and sage and saute 30 seconds.
  5. Whisk in flour mix and ground flaxseeds until well combined.
  6. Whisk in water, tamari and pepper slowly.
  7. Bring it to a simmer over medium high whisking frequently.
  8. Simmer until thick and creamy.
