The Best Darned Gravy I've Ever Had

- ½ cup nutritional yeast
- ¼ cup all purpose flour (or use Gluten Free such as Bob's Red Mill)
- ⅓ cup olive oil
- ½ cup finely chopped onion
- 2 tsp minced garlic
- 2 tsp chopped fresh thyme or 1 tsp dried
- 2 tsp chopped fresh sage or 1 tsp dried
- 1 tbsp ground flaxseed
- 4 cups water
- ¼ cup tamari
- ½- 3/4 tsp freshly ground black pepper
- Stir nutritional yeast and flour in a dry heavy skillet over medium heat for about 5 minutes until golden and fragrant. Set aside.
- Heat oil in a large heavy saucepan over medium heat.
- Add onion and saute until beginning to brown about 7 minutes.
- Add garlic, thyme, and sage and saute 30 seconds.
- Whisk in flour mix and ground flaxseeds until well combined.
- Whisk in water, tamari and pepper slowly.
- Bring it to a simmer over medium high whisking frequently.
- Simmer until thick and creamy.
