Moroccan Soup

A delicious pureed chickpea soup.

Serves: 4
Ingredients
  • 1 tbsp oil of choice (or saute in water)
  • 2 cups white, diced onion
  • 2 cloves garlic, pressed
  • 2 tsp salt
  • 2 tsp sugar
  • 1 tsp ground cumin
  • 1 tsp paprika
  • pinch of cayenne (optional)
  • 4 diced tomatoes
  • 4½ cups canned, rinsed chickpeas
  • 3 cups water
Instructions
  1. Heat the oil (or water) in a soup pot over medium heat.
  2. Add the onions and cook for about 4 minutes.
  3. Add the garlic and cook for another minute.
  4. Add the salt, sugar, ground cumin, paprika and cayenne if using. Mix well.
  5. Add your chickpeas and chopped tomatoes stirring well.
  6. Add the water and bring it a boil. Reduce heat and allow it to simmer with the lid on for about 30 minutes.
  7. Allow it to cool slightly and add it to your blender.
  8. Blend until smooth or leave a few small chunks.
