Indian Masala Roasted Cauliflower

Serves: 4
- 1 head cauliflower cut into florets
- 4 tbsp oil of choice (I used canola)
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp turmeric
- 1 tsp salt
- Preheat the oven to 400 F (200 C).
- Line a baking sheet with parchment paper if using.
- Place the cut up cauliflower in a large bowl and drizzle the oil over top.
- In a small bowl combine your cumin, coriander, turmeric and salt.
- Sprinkle the spice mixture over the cauliflower and with your hands toss until evenly coated with both the oil and spice mix.
- Arrange the cauliflower in a single layer on the baking sheet.
- Roast for 25-35 minutes or until the cauliflower is tender and the edges are nicely browned.
