Indian Masala Roasted Cauliflower

Serves: 4
Ingredients
  • 1 head cauliflower cut into florets
  • 4 tbsp oil of choice (I used canola)
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp salt
Instructions
  1. Preheat the oven to 400 F (200 C).
  2. Line a baking sheet with parchment paper if using.
  3. Place the cut up cauliflower in a large bowl and drizzle the oil over top.
  4. In a small bowl combine your cumin, coriander, turmeric and salt.
  5. Sprinkle the spice mixture over the cauliflower and with your hands toss until evenly coated with both the oil and spice mix.
  6. Arrange the cauliflower in a single layer on the baking sheet.
  7. Roast for 25-35 minutes or until the cauliflower is tender and the edges are nicely browned.
