Black Bean and Quinoa Salad

A delicious Black Bean and Quinoa Salad lightly dressed in a Southwestern style cumin lime dressing!

Ingredients
  • 2 cups of cooked quinoa (about ½ cup dried)
  • ¼ cup extra virgin olive oil
  • 1 tsp ground cumin
  • 2 cloves garlic, pressed
  • 2 tbsp lime juice
  • 1 tsp salt
  • 1½ cups cooked black beans (or canned, drained and rinsed well)
  • ¾ cup frozen corn, thawed (rinse under running water and drain well)
  • ½ cup red pepper, diced
  • 2 green onions, chopped
  • ¼ cup cilantro, chopped
Instructions
  1. Prepare all of your ingredients.
  2. Mix your extra virgin olive oil, cumin, pressed garlic, lime juice and salt in a large mixing bowl.
  3. Add your quinoa, black beans, corn, red pepper, green onions and cilantro and mix well to ensure the dressing coats everything well.
  4. Refrigerate to cool before serving.
