Summertime Fresh Peach Oatmeal Crumble

Ingredients
  • The Fruit Mix
  • ½ cup sugar
  • 2 tbsp whole wheat flour
  • 1 tsp cinnamon
  • 5 fresh peaches peeled and and sliced thinly
  • The Crumble
  • ⅛cup whole wheat flour
  • ⅛ cup all purpose flour
  • ¼ cup brown sugar
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon salt
  • ¼ cup vegan butter
  • ¼ cup rolled oats
Instructions
  1. Preheat the oven to 375 F (190C).
  2. To prepare the fruit:
  3. In a medium bowl whisk the sugar, whole wheat flour and cinnamon together.
  4. Toss in the sliced peaches and mix well to coat. Set aside.
  5. To Prepare the Crumble:
  6. In a separate bowl combine the whole wheat flour, all purpose flour, brown sugar, cinnamon and salt. Whisk to combine.
  7. Use a pastry cutter to cut the vegan butter into the mix until it is crumbly.
  8. Add the oats and briefly cut with the pastry cutter to incorporate.
  9. To assemble:
  10. Divide the peach mix between 5 or 6 ramekins. Sprinkle the crumble mix on top.
  11. Place on the centre rack of the oven and cook for about 35-40 minutes until the peaches are soft and the topping is lightly browned.
  12. Remove from the oven and allow them to cool for a few minutes.
  13. Eat as is or serve with ice cream.
