Summertime Fresh Peach Oatmeal Crumble

- The Fruit Mix
- ½ cup sugar
- 2 tbsp whole wheat flour
- 1 tsp cinnamon
- 5 fresh peaches peeled and and sliced thinly
- The Crumble
- ⅛cup whole wheat flour
- ⅛ cup all purpose flour
- ¼ cup brown sugar
- ½ teaspoon ground cinnamon
- ⅛ teaspoon salt
- ¼ cup vegan butter
- ¼ cup rolled oats
- Preheat the oven to 375 F (190C).
- To prepare the fruit:
- In a medium bowl whisk the sugar, whole wheat flour and cinnamon together.
- Toss in the sliced peaches and mix well to coat. Set aside.
- To Prepare the Crumble:
- In a separate bowl combine the whole wheat flour, all purpose flour, brown sugar, cinnamon and salt. Whisk to combine.
- Use a pastry cutter to cut the vegan butter into the mix until it is crumbly.
- Add the oats and briefly cut with the pastry cutter to incorporate.
- To assemble:
- Divide the peach mix between 5 or 6 ramekins. Sprinkle the crumble mix on top.
- Place on the centre rack of the oven and cook for about 35-40 minutes until the peaches are soft and the topping is lightly browned.
- Remove from the oven and allow them to cool for a few minutes.
- Eat as is or serve with ice cream.
