Delicious, Super Quick and Easy Burritos

- 1 15 oz can of black beans rinsed and drained
- 1 cup frozen corn
- 1 cup of your favourite salsa
- 1 tbsp ground cumin
- 1 tbsp ground chili powder
- cherry tomatoes, chopped
- cucumber, chopped
- lettuce, chopped
- cilantro (optional)
- tortillas
- Preheat your oven to 350F (175 C).
- In a large skillet over medium heat add your rinsed and drained black beans, frozen corn, salsa, cumin and chili powder.
- Cook for about 10 minutes adding a little more salsa or a bit of water if too dry.
- Add your tortillas to the oven rack and warm them for about 2-3 minutes.
- Remove your warm tortillas from the oven and add your bean filling and cucumber, tomatoes, lettuce, cilantro or whatever toppings you like.
- Wrap up each tortilla, cut in half if you like and serve!
- Leftovers? These pack well for lunches. Just wrap in plastic wrap or foil and eat on the go.
