Delicious, Super Quick and Easy Burritos

Ingredients
  • 1 15 oz can of black beans rinsed and drained
  • 1 cup frozen corn
  • 1 cup of your favourite salsa
  • 1 tbsp ground cumin
  • 1 tbsp ground chili powder
  • cherry tomatoes, chopped
  • cucumber, chopped
  • lettuce, chopped
  • cilantro (optional)
  • tortillas
Instructions
  1. Preheat your oven to 350F (175 C).
  2. In a large skillet over medium heat add your rinsed and drained black beans, frozen corn, salsa, cumin and chili powder.
  3. Cook for about 10 minutes adding a little more salsa or a bit of water if too dry.
  4. Add your tortillas to the oven rack and warm them for about 2-3 minutes.
  5. Remove your warm tortillas from the oven and add your bean filling and cucumber, tomatoes, lettuce, cilantro or whatever toppings you like.
  6. Wrap up each tortilla, cut in half if you like and serve!
  7. Leftovers? These pack well for lunches. Just wrap in plastic wrap or foil and eat on the go.
