Ingredients
  • 1 package Beyond Beef Plant Based Ground
  • 1½ cups black beans rinsed
  • 1 cup frozen corn
  • ½ cup salsa
  • 2 tbsp taco seasoning
  • 2 whole wheat tortillas
  • ½- 3/4 cup shredded vegan cheddar cheese
  • Toppings (choose what you like):
  • cilantro, chopped
  • jalapeno, thinly sliced
  • green onion, sliced thinly
  • tomatoes, chopped
  • lettuce, chopped
  • guacamole
  • salsa
  • sour cream (optional)
Instructions
  1. Preheat oven to 375 F.
  2. Pan fry Beyond Beef Plant based Ground as per package directions.
  3. Once done add in black beans and corn, ½ cup salsa and taco seasoning. Stir well to combine. Remove from heat.
  4. Place 1 cup of mixture in bottom of round cake pan and spread out evenly.
  5. Cover with one tortilla.
  6. Place 2 cups of mixture on top of tortilla and spread out evenly.
  7. Cover with another tortilla.
  8. Place remaining mixture on top and spread out evenly right to edges (this will be a thinner layer).
  9. Sprinkle vegan cheddar over top.
  10. Bake about 30 minutes until hot and cheese melted.
  11. While it's baking chop all your veggies and prepare your toppings.
  12. Remove from oven and allow it to cool for 5-10 minutes.
  13. Slice into wedges and allow each person to add their sour cream, cilantro, jalapeƱo, green onion, tomatoes, lettuce, salsa and/or guacamole.
