I think that for those of us who like to indulge in rich, creamy, cheesy dishes, the idea of going ‘without’ these staples can make the idea of transitioning to a plant-based diet a little daunting. Don’t worry, I can assure you that there are mouth-watering, delicious, substitutes for absolutely everything! This quick, crowd pleasing Spinach Artichoke Dip is a great example and it’s perfect for potlucks. You won’t leave without being asked for the recipe. And for an added bonus: kids love it!!
Preheat the oven to 350F (175C). Lightly grease a small 1 quart baking dish. In a large skillet, heat the oil over medium heat and saute the onions until soft. Add the garlic and cook another minute. Reduce the heat to low and add the spinach stirring until wilted. Remove it from the heat.
In a food processor, blend the Silken tofu, nutritional yeast, lemon juice, basil, salt and pepper until it’s smooth. Add your artichokes and your spinach mix and pulse it about 15 times. Spread the dip into your baking dish and bake it for about 30 minutes or until lightly browned on top. Allow it to cool a bit and then serve with tortilla chips, crackers or veggies.
