These are a SUPER delicious, glorified Oatmeal Chocolate Chip Cookie with the addition of a few healthful ingredients. I am asked for this recipe by just about everyone who has one. They are THAT good!!
Preheat your oven to 350 F (175 C). Line two cookie sheets with parchment paper or use unlined stone cookie sheets. Using an Electric Stand Mixer, mix the non dairy butter and brown sugar until creamy and fully blended. Add vanilla and flax egg and beat until light and fluffy. Stir in oats, all purpose and spelt flours, baking soda, salt and coconut and mix until just incorporated. Finally add your chocolate chips and walnuts and stir to combine. Place golf ball sized balls of cookie dough on your Stone Cookie Sheet and flatten slightly. Bake for 14-15 minutes until the tops are firm and edges golden. Remove from the oven and allow to cool for 5 minutes. Soooo good!!!

- 1 tsp pure vanilla extract
- 1 flax egg (3 tbsp water mixed with 1 tbsp ground flax seeds)
- 2 cups quick cooking oats
- 1 cup all purpose flour
- ½ cup spelt flour
- 1 tsp baking soda
- ¼ tsp salt
- ⅓ cup coconut
- ½ cup walnut pieces (or ½ cup broken up pretzels chocolate chip size if nut free)
- ½ cup chocolate chips
