Without a doubt, this is seriously the best darned gravy I have ever had! It’s rich and flavourful and has the familiar flavours of garlic, thyme and sage. I have made this many times for my omnivorous friends and family and I can’t help but notice the skeptical looks on their faces when I mention gravy and plant based in the same sentence. And then they try it, and voice both their shock and pleasure…and go back for more. Give this a try. It’s really THAT good!
Stir the nutritional yeast and flour in a dry heavy skillet over medium heat for about 5 minutes until golden and fragrant. Set it aside.
Heat oil in a large heavy saucepan over medium heat. Add onion and saute until beginning to brown about 7 minutes. Add garlic, thyme, and sage and saute 30 seconds. Whisk in flour mix and ground flaxseeds until well combined. Whisk in water, tamari and pepper slowly. Bring it to a simmer over medium high whisking frequently until it’s thick and creamy.

- 1 tbsp ground flaxseed
- 4 cups water
- ¼ cup tamari
- ½- 3/4 tsp freshly ground black pepper
