And so in a flash, Christmas has come and gone and a new year awaits us all (if we’re lucky;) It seems that most of our friends and family were blessed with a lovely, lingering, barky Christmas cough and oh, yes… they were kind enough to share. A full day in bed and with my head still feeling like it’s stuck in a giant fishbowl, I really, really just want soup, soup and more soup so this is what I made and it is delicious! Warm, smooth, nutritious comfort that’s incredibly easy to make. Even when you’re sick:) Happy New Year everyone!
To make this super easy and tasty soup heat the oil (or water if you’re oil free) in a soup pot over medium heat. Add the onions and cook for about 4 minutes. Add the garlic and cook for another minute. Add the salt, sugar, ground cumin, paprika and cayenne (if using). Mix well. Add your chickpeas and chopped tomatoes stirring well. Pour in the water and bring it all to a boil. Once boiling, reduce the heat and let it simmer with the lid on for about 30 minutes. Allow it to cool slightly and add it to a high speed blender. Blend until smooth or leave a few small chunks if that’s your preference. Garnish with tomato, finely diced onion and/or parsley. Enjoy! Stay well!

- 1 tbsp oil of choice (or saute in water)
- 2 cups white, diced onion
- 2 cloves garlic, pressed
- 2 tsp salt
- 2 tsp sugar

- 1 tsp paprika
- pinch of cayenne (optional)
- 4 diced tomatoes
- 4½ cups canned, rinsed chickpeas
- 3 cups water
- Heat the oil (or water) in a soup pot over medium heat.

- Add the salt, sugar, ground cumin, paprika and cayenne if using. Mix well.
- Add your chickpeas and chopped tomatoes stirring well.
- Add the water and bring it a boil. Reduce heat and allow it to simmer with the lid on for about 30 minutes.
- Allow it to cool slightly and add it to your blender.
- Blend until smooth or leave a few small chunks.
