This is truly my kind of muffin. Pumpkin, molasses, bran, walnuts and all of my favourite spices come together in this gem of a recipe. These Pumpkin Bran muffins are perfect for breakfast, lunches or snacks for the kiddos, and will leave your kitchen smelling like you are a culinary rock star. You’re welcome;)
Preheat the oven to 400 F (200C). Line a muffin pan with 12 cupcake liners. In a medium mixing bowl whisk together the pumpkin puree, milk, vinegar, oil, bran, molasses and vanilla until well incorporated.
In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, ginger, nutmeg, allspice and ground cloves. Add the wet ingredients to the dry and mix gently just until all is moistened.Do not overmix. Add your walnuts and stir to combine. Divide the batter amongst your 12 cupcake liners. Sprinkle the tops with any remaining walnut pieces. Bake for about 25 minutes or until a toothpick inserted in the centre comes out clean.Enjoy!!
