If you don’t have a one pot pasta dish in your recipe repertoire you need to try this! This is quick and easy to make and is probably the one and only thing that I make that doesn’t make a gigantic mess. A one pot wonder that is hearty (thank you chickpeas), flavourful (olives, basil, artichokes, sundried tomatoes) and pretty darned healthy. I have to admit that the first time I cooked up one of these one pot pastas I had my doubts, but it really works! The starch from the pasta thickens the sauce and the flavours all meld together to create something fresh and light that’s perfect for lunch or supper.Lay your spaghetti in a large pot (I use this Red Lodge Dutch Oven) and pile all of the other ingredients around it. Don’t forget to add your broth. Cover your pot and bring it to a boil on the stovetop. Once it’s boiling reduce the heat to medium and cook for about 10-12 minutes more stirring occasionally. Keep it covered in between stirring until the last couple of minutes so that you can watch it to ensure it doesn’t burn. It’s done when the pasta is al dente or cooked to your liking.Give it a final stir and voila! A super simple, deliciously saucy, fully loaded one pot wonder!Serve and enjoy!!

- 12 oz (340 g) whole wheat spaghetti
- 15 sliced black kalamata olives
- 1 14 oz (396 g) jar of artichoke hearts, drained and chopped
- 1 cup cooked and drained chickpeas
- ½ cup diced onion
- 4 cloves garlic, pressed
- handful of spinach, chopped
- ⅓ cup fresh basil, chopped
- 1½ tbsp sundried tomatoes, chopped
- 1 14 oz (396 g) can diced tomatoes (do not drain!)
- 1 tbsp dried oregano
- ½ tsp dried thyme
- ½ tsp salt
- 3½ cups vegetable broth
- pepper to taste
- Lay your spaghetti in a large pot and pile all of the other ingredients around it. Don't forget to add your broth.
- Cover your pot and bring it to a boil on the stovetop.
- Once boiling reduce the heat to medium and cook for about 10-12 minutes stirring occasionally.
- Keep it covered in between stirring until the last couple of minutes so that you can watch it and ensure it doesn't burn.
- It is done when the pasta is al dente or cooked to your liking. (Note that the pasta will take longer than it says on the pasta's directions as you are not cooking it alone).

This is one of my favorite recipes. So very easy and delicious. I made it the other night for a family. The father spent a year in Italy and loves good Italian food but isn’t a totally plant based eater. He loved it and took seconds. Yeah!!!!!

This is a recipe I use often…..who doesn’t like pasta?????? This is full of flavor….quick and easy. ….yes all about easy and so little clean up. When I am having non vegan company this is my absolute fail free recipe. It is always a favorite. …. and often wonder how I ever managed without it. Thank you Tara…your recipes are amazing….!!!
