My kids absolutely love this classic chocolate pudding from the Moosewood cookbooks and it takes just a few minutes to make. Adapted from Moosewood Collective. "Silken Chocolate Pudding." The Moosewood Restaurant Cooking for Health.- 1 16 oz package silken tofu
- 3 tbsp confectioners sugar
- 8 oz semisweet chocolate
- 6 tbsp water
- 3 tbsp unsweetened cocoa powder
- 1 tsp pure vanilla extract
- In a food processor blend tofu and confectioners sugar until well blended.
- In a small double boiler warm chocolate, water, cocoa and vanilla on low. Stir thoroughly until melted and mixed.
- Pour chocolate sauce into food processor with sweetened whipped tofu and whirl again until very smooth.
- Spoon into 6 serving cups and chill for at least an hour.
- Garnish with chopped toasted walnuts and raspberries.
