My kids absolutely love this healthy version of Mac and Cheese. If it’s up to them, this is what we have for supper, and it’s my son’s most requested item for in his thermos at school. It makes a lot of sauce but trust me, pour it in and mix well. Add a bit of ketchup for that familiar comfort food flavour. This reheats well so I’ll often make a batch Sunday night and the kiddos get to take it to school all week! Let me know what your kids think!
Place potato, carrot and onion in a pot with 2 cups of water and bring to a boil. Cover, reduce heat and simmer for 20 minutes. Turn off heat and add Vegan Becel, nutritional yeast, ketchup, turmeric, salt, garlic powder, onion powder and pepper. Transfer to Vitamix and blend until smooth. Add 3 tbsp of canned coconut milk and blend again.
Cook macaroni as per package directions. Drain and return to pot.
Pour sauce over top and mix well. Serve with ketchup.

- 1 tsp white/ shirt miso
- 1 tsp mustard (prepared)
- 1 tbsp lemon juice
- 4 cups dried white macaroni or gluten free rice macaroni
- additional ketchup for serving

Hello,
Could you please clarify an item in the recipe?
“4 Cups dried white macaroni”
This caught my eye because if you cook up 4 cups of dried macaroni you are going to have a boatload of cooked macaroni when its cooked. Is this a correct amount? Do you really mean 4 cups cooked macaroni for this recipe?

Nope, I use 4 cups dried:) The leftovers heat up well.
