This is what we make when we just don't feel like cooking or what we eat when we get home late and have to make something quickly. Refried beans with jalapeños and frozen mango is the perfect combination of sweet and spicy.
Gather your ingredients and you'll be eating before you know it! Divide one can of spicy refried beans amongst 4 tortillas and spread with the back of a spoon. Chop up the mango, green onion (or red onion), red pepper, cilantro (and jalapeño if using). I prefer frozen mango for this because it's sure to be really sweet. The 'fresh' mango available here is often picked way too early and the flavour can be quite disappointing.
In a large bowl mix your chopped produce and divide it amongst the four tortillas. Add vegan cheddar shredded cheese if using. Cover each with a top tortilla.
Preheat a panini grill or grill pan just below medium and cook for about 2 minutes per side.
Remove and slice with a pizza cutter.
Serve with your favourite salsa (or guacamole).

- 1 package of flour tortillas
- 1 can of spicy refried beans OR 1 can of refried beans and add one diced jalapeño to filling
- 1 cup frozen mango pieces thawed and diced
- 1 red pepper, diced
- 1 green onion, chopped (or chopped red onion)
- 1 bunch cilantro, chopped
- Vegan cheddar shredded cheese (optional)
- Salsa
- Spread refried beans on 4 flour tortillas.
- In large bowl add chopped mango, green onion, red pepper, cilantro and jalapeño if using regular canned refried beans. Mix.
- Divide filling amongst 4 tortillas.
- Add Vegan Cheddar shreds if using.
- Cover with top tortilla.
- Preheat panini or grill pan just below medium. Cook for about 2 minutes per side.
- Remove and slice with pizza cutter.
