Creamy and delicious, this is my favourite Caeser Salad recipe EVER. This is such a classic dish and the flavour in this recipe really kicks it up a notch. I think that almost every cookbook I own has a plant based version of Caeser Salad. Don’t waste your time. THIS is IT!! First prepare your croutons. Preheat the oven to 325 F degrees. Cut 6 pieces of bread into 1/2 inch cubes. Mix the olive oil, maple syrup, salt and pepper in a large bowl and then add your bread cubes and toss well until evenly coated. Bake for about 25 minutes flipping every 10 minutes and watch to ensure they don’t burn. When they are crisp and golden brown, they are done. Remove from the oven and set aside to cool. Add your Silken tofu, olive oil, garlic, lemon juice, apple cider vinegar, Dijon, White miso, salt and pepper to a food processor. Don’t let the list of dressing ingredients scare you. They are literally dropped into the processor and blend up in less than a minute. Taste it! Amazing right?!In a large bowl combine lettuce with as much dressing as you like and top with a handful of Maple Croutons.

- Maple Wheat Croutons:

- Caeser Dressing:
- ¼ cup Silken tofu
- ¼ cup olive oil
- 2 cloves garlic
- 2 tbsp lemon juice
- 1 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp white miso paste
- 1 tsp salt
- ¼ tsp freshly ground black pepper
- The rest:
- 1 head of romaine lettuce cut or torn into bite sized pieces

Can I use tahini instead of silken tofu?

I wouldn’t recommend it. The silken kind of creates a blank slate to add all of these wonderful flavours to. I think the strong flavour of the tahini would completely change the recipe and not in a good way;)

Where can I find white miso? Is it a powder or a paste?

It’s a thick paste that is usually refrigerated. If it’s not at your mainstream grocery store (many carry it) you can definitely find it at any health store. I have a photo of the brand I use under ‘Pantry’ if you’d like to see what it looks like:)
