Chao Cheese is THE game changer for those wanting to eat a plant based diet and still have access to a great tasting grilled cheese sandwich. I remember when Field Roast announced the 'debut' of three bold flavors of Chao Slices. They were marketed as great melted or straight out of the package but I was a bit skeptical. There was a lot of chatter and the reviews seemed to be unanimous. This stuff was apparently great! Only available in the States, I thought I'd grab some on my next trip down and holy moly, was I pleasantly surprised! The slices are coconut based and seasoned with a fermented Vietnamese 'Chao' tofu. The Creamy Original reminded me of the Havarti slices we used to use in our melted sandwiches. And the Tomato Cayenne? It is so spicy and flavourful and makes the best grilled cheese sandwiches, particularly in the recipe that follows. As of October, Chao will be available in Canada. (I realize I sound like a paid spokesperson, but I'm not! I'm just a huge fan!)
Preheat grill pan over medium heat. Spread mayo on both sides of sandwich. Spread dijon on one side of each sandwich. On one side of sandwich layer slice of Cayenne Tomato Chao, red pepper strips, tomato and spinach. Add salt and pepper to taste. Close sandwich and paint on thin layer of olive oil. Add to grill pan oil side down and paint oil on remaining side of sandwich.
Flip after approximately two minutes. Cook other side for another two minutes and remove from pan.Enjoy!

- 4 slices of bread

- ¼ cup baby spinach leaves
- ½ red pepper cut into thin slices
- salt and pepper to taste

I can never get my cheese to melt. It falls apart. What am I doing wrong?
You can take the cheese out of the fridge for a bit before you use it but generally I just cook low heat slowly and put a lid over the pan. It melts every time:)
This sandwich is my “go to” food when I am needing something warm and filling but quick and easy! It never lets me down! YUMMY!!!
