We definitely did not grow up eating beans in my house, except for the occasional ‘gourmet supper’ that came from packaging and a can, otherwise known as beans and weiners. Even now when I think of eating beans for a meal, initially it doesn’t really excite me or my taste buds because I still imagine that canned variety that we ate in yesteryears. If you feel the same way, I can assure you that beans are actually incredibly delicious if prepared right as they are in this recipe. If I was forced to choose just one thing that I would eat every day for the rest of my life, this recipe is probably it. I make this white bean version of hummus in bulk and freeze it in small containers. We eat it with everything; raw veggies, apple slices, tortilla chips, or to throw together this meal in minutes. I made the wise time saving decision to invest in an Instantpot electric pressure cooker awhile back so I soak my dried beans overnight (or for a few hours prior to using) and cook them in just 6 minutes. You can also buy the canned, cooked variety of any small white bean if you don’t want to cook your own.
Throw your cooked (or canned) beans, oil, lemon juice, garlic, salt and pepper in a food processor and blend until smooth. Remove and place in a serving bowl. Dice your tomatoes and chop your basil and place them in separate serving bowls. Cook your pizza crust as per package directions but you may need to remove it early as it cooks quicker with no toppings on it. Remove from oven. Cut into slices with pizza cutter and divide amongst plates. We like to prepare ours individually but you can alternatively put this all together before slicing into individual pieces. - For the White Bean Hummus:
- 1 can white beans rinsed and drained or 1½ cups of cooked/ drained small white beans
- ¼ cup olive oil
- 1 tbsp lemon juice
- 1 garlic clove, pressed
- ½ tsp salt
- ½ tsp freshly ground pepper
- The Rest:
- 2-3 tomatoes diced
- ⅓ cup fresh chopped basil
- Pizza crust
- Add your cooked or canned beans, oil, lemon juice, garlic, salt and pepper to food processor and blend until smooth.
- Remove with a spatula and place in serving bowl.
- Chop tomatoes and basil and place in individual serving bowls.
- Cook pizza crust following package directions shortening by 3-4 minutes as the crust cooks quickly with no toppings on it.
- Remove from oven.
- Cut into slices and serve onto individual plates.
- Smear each slice with bean mixture, and sprinkle with basil and tomatoes.
