This looks and tastes much better than greasy fried rice and is instead a delicious, healthy alternative. It is loaded with fruit, veggies, tofu, nuts, and flavour and makes for great leftovers! Prepare all of your ingredients. In a large skillet, heat the oil over medium high and saute the onions until soft. Season with salt. Add garlic, curry, coriander and cook for another minute. Add cashews, carrots, peas, raisins, pineapple, smoked tofu, rice, soy sauce and broth. Mix thoroughly and serve (in a hollowed out pineapple if you’re feeling fancy;) with Thai Sweet Chili Sauce (optional).

- 1 tbsp canola oil

- ¾ cup cashews

- ½ cup frozen peas
- ½ cup raisins
- 3 cups cooked rice
- ¼ cup vegetable broth
- 3 tbsp soy sauce (to taste)
- Serve with:
- thai sweet chilli sauce to taste (optional)
