These are a very familiar tasting sandwich for those who are new to a plant based diet. With a mayo base and celery and green onions, they are reminiscent of tuna or chicken salad sandwiches. Perfect for a picnic or making ahead, this is a crowd pleaser and a staple in our household. In a large bowl mash your cooked or canned chickpeas until flaky using a hand held potato masher. Stir in the chopped celery, green onions, relish, bell peppers, mayonnaise, garlic, mustard, dill, lemon, salt and pepper until well combined. Adjust seasonings to taste.Serve on a sandwich or wrap with all the fixings, on crackers, on chips or on top of a green salad! Enjoy!

- ¼ cup relish
- ¼ cup finely chopped red bell pepper
- 3 tbsp vegan mayonnaise
- 1 clove garlic minced
- 1½ tsp prepared yellow mustard
- 1 tsp dried dill or 2 tsp minced fresh dill
- 2 tsp fresh lemon juice
- ¼ tsp salt
- freshly ground black pepper
- Kale or lettuce for sandwiches
- Bread, wraps, chips, crackers or salad for serving

I make a similar recipe all the time. I put kelp flakes in mine and it gives it a fishy flavor that makes it taste like tuna! Yum!
