Trust me, you need to be excited about this recipe!! This Indian Masala Roasted Cauliflower is not only quick and easy to make but is exploding with rich, layered Eastern flavours. It’s simply the tastiest roasted cauliflower recipe I’ve ever had. Make an extra batch as the leftovers are great straight from the fridge as well!
Preheat the oven to 400 F (200 C). Line a baking sheet with parchment paper if using. Place the cut up cauliflower in a large bowl and drizzle the oil over top.
In a small bowl combine your cumin, coriander, turmeric and salt. Sprinkle the spice mixture over the cauliflower and with your hands toss until evenly coated with both the oil and spice mix.
Arrange the cauliflower in a single layer on the baking sheet. Roast for 25-35 minutes or until the cauliflower is tender and the edges are nicely browned.
So unbelievably good! Enjoy!

If you look for a cauliflower recipe it’s often covered in cheese. This is the way to eat it! Great Indian flavors but the cauliflower still shines through. So easy too! I cut the salt in half.

I made this a couple of weeks ago as a side dish for Indian butter chicken. It was so delicious that I’ve been thinking about it ever since. I have a tray in the oven right now and that is all I’m having for dinner. It’s that good.
Made this this evening as a part of a bigger Indian feast … served with a spicy mayo dipping sauce and mint cilantro chutney dipping sauce. It was delicious. One thing I did was to add a tablespoon of cornstarch to the spice mix. It helped the spices turn into a crunchy coating …
A new take out restaurant had this dish in an article in the Tampa Bay Times newspaper’s food section with a photo & mentioned it has “a hint of citrus” flavor. I have not been there to buy it so I saw your recipe on a Google search. Does this have the Hint of Citrus flavor also? The Sept. 2, 2020 paper had a nice article of Natasha Punwani’s Tampa Florida restaurant. I plan on cooking yours as soon as I gather all the ingredients.
