It’s National Peach Pie Day!!! Ok this isn’t exactly peach pie but close enough? At our house we prefer this super delicious Summertime Fresh Peach Oatmeal Crumble and this was made at my hubby’s request for his birthday. We bought a wee little peach tree a couple of years ago and although it has been consistently providing us with a few peaches each summer, this year was spectacular! Huge juicy peaches and lots of them. We ate them fresh from the tree, dumped them in smoothies and made a few desserts, like this take on a traditional favourite.
Apparently men don’t mature until they hit 43 (just google it;), and since this is THAT birthday for him, it’s an exciting day for all of us!Preheat the oven to 375 F (190C). To prepare the fruit: In a medium bowl whisk the sugar, whole wheat flour and cinnamon together. Toss in the sliced peaches and mix well to coat. Set aside.To Prepare the Crumble: In a separate bowl combine the whole wheat flour, all purpose flour, brown sugar, cinnamon and salt. Whisk to combine. Use a pastry cutter to cut the vegan butter into the mix until it is crumbly. Add the oats and briefly cut with the pastry cutter to incorporate.To assemble: Divide the peach mix between 5 or 6 ramekins. These red ramekins are from Rachel Ray’s line and are super cute and really inexpensive (last time I checked they were like $14 inexpensive! Woah..I paid way more than that!) Sprinkle the crumble mix on top. Place on the centre rack of the oven and cook for about 35-40 minutes until the peaches are soft and the topping is lightly browned.Remove from the oven and allow them to cool for a few minutes. Eat as is or serve with ice cream (Have you tried Coconut Bliss? Sooo good!!) Enjoy!!

- ¼ cup rolled oats

Sounds yummy and I am so not dessert!!! Will be trying this one for sure as I have a “Sweets” man who would love it!!!
