Yeah I know, burrito recipes are a dime a dozen so what’s so great about this one? You can have these on the table start to finish in 15 minutes with ingredients that you’ve probably already got hanging around in your pantry. Sometimes I NEED recipes like this because we’re a busy family (whose isn’t?!) and believe or not sometimes I just don’t feel like cooking.
So here it is..the perfect dinner when you don’t wanna do dinner but you or your kids (!) wanna eat. Ready in minutes and super tasty!Preheat your oven to 350F (175 C). In a large skillet over medium heat add your rinsed and drained black beans, frozen corn, salsa, cumin and chili powder. Cook for about 10 minutes adding a little more salsa or a bit of water if too dry. Add your tortillas to the oven rack and warm them for about 2-3 minutes. Remove the warm tortillas from the oven and add your bean filling and cucumber, tomatoes, lettuce, cilantro or whatever toppings you like. Wrap up each tortilla, cut in half if you like and serve!
Leftovers? These pack well for lunches. Just wrap in plastic wrap or foil and eat on the go.

- 1 tbsp ground cumin
- 1 tbsp ground chili powder
- cherry tomatoes, chopped
- cucumber, chopped
- lettuce, chopped
- cilantro (optional)
- tortillas
