This is a delicious treat! If you like tacos or reminisce about Taco Pie from your pre vegan days, you need to add this to your recipe repertoire. It’s a good one:)Preheat oven to 375 F. Pan fry Beyond Beef Plant based Ground as per package directions. Once done add in black beans and corn, 1/2 cup salsa and taco seasoning. Stir well to combine. Remove from heat. Place 1 cup of mixture in bottom of round cake pan and spread out evenly. Cover with one tortilla. Place 2 cups of mixture on top of tortilla and spread out evenly.
Cover with another tortilla. Place remaining mixture on top and spread out evenly right to edges (this will be a thinner layer).
Sprinkle vegan cheddar over top. Bake about 30 minutes until hot and cheese melted. While it’s baking chop all your veggies and prepare your toppings.
Remove from oven and allow it to cool for 5-10 minutes. Slice into wedges and allow each person to add their own sour cream (optional), cilantro, jalapeño, green onion, tomatoes, lettuce, salsa and/or guacamole.
Dig in!

Hi EVERYONE!!! Just made this Taco Pie for dinner tonight and it was absolutely delicious!! Honestly this recipe was truly one of the best darn recipes EVER and full of flavour!!! This is not only going to be one of my top “go to” meals but one that I would certainly serve to guests should we ever get back to entertaining! So go try it……it will not disappoint!!! ENJOY!!!
